Shikimic acid is a white crystalline powder that is easily soluble in water. It was named after its first isolation from the Japanese star anise and is an important metabolite in plants and microorganisms. For a long time, shikimic acid has primarily been extracted from the dried mature fruits of plants in the Illiciaceae family, such as star anise or Japanese star anise (Illicium anisatum). In recent years, there have also been reports of extracting shikimic acid from the fruits of the North American sweetgum tree and pine needles.

Shikimic acid, by affecting arachidonic acid metabolism, inhibits platelet aggregation, arterial and venous thrombosis, and cerebral thrombosis. It has anti-inflammatory and analgesic effects and can also be used as an intermediate in antiviral and anticancer drugs. Additionally, it plays a role in the prevention of avian flu through medications like "Tamiflu" and "Oseltamivir."
Shikimic acid is a key raw material for Roche's production of Tamiflu. Initially, Tamiflu was produced using quinic acid as the starting material through a 12-step process, but due to the high cost of quinic acid, a method was later developed to produce Tamiflu using shikimic acid as the starting material, requiring 10-16 steps. From the perspectives of purification, bioactivity, and cost, the production of Tamiflu primarily relies on extraction from star anise. In addition to plant extraction, shikimic acid can also be obtained through microbial fermentation and chemical synthesis.
